Christmas Shortbread
Christmas Shortbread - GF
Ingredients:
- 250g cubed butter at room temperature
- ½ cup caster sugar + extra for dusting
- 1tsp pure vanilla extract
- ½ cup rice flour
- 1 + 1/2 cups Orgran GF Plain Flour + extra for kneading
- ½ cup arrowroot flour
Directions:
- Preheat oven 150deg
- Line 2 trays with baking paper
- Using Food Processor:
- Sift all flours as you add them to the bowl
- Add sugar and combine for 5-10 sec on low speed
- Add vanilla and butter
- Whizz on low to moderate until forms a soft dough approx. 1min
- Using Electric Beaters:
- Beat the butter and sugar until pale and creamy
- Add vanilla
- Slowly add sifted flours beating on low speed until almost combined
- Use your hands to bring the dough together
- Turn out on to a floured surface, knead gently until smooth (if a little too soft or sticky knead in a bit more flour)
- Roll out between 2 sheets of baking paper to 1cm thick
- Cut out desired shapes and carefully lift onto baking trays
- Optional – Sprinkle with a little extra caster sugar
- Bake for 20mins or until slightly golden
