Denese Gets Cooking - Paleo Blueberry Pancakes

Paleo Blueberry Pancakes

Ingredients:

  • 4-6 Eggs (4 large or 6 small) 
  • 3-4 tablespoons Coconut Flour
  • 2 tablespoons Almond Meal
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Baking Powder (Aluminium Free)
  • 2 tablespoons Maple Syrup or Honey - Plus a little extra to serve
  • 1 teaspoon Vanilla Extract
  • Pinch of Himalayan Salt
  • 125g punnet Blueberries
  • 3 drops lemon oil - optional
  • Olive Oil or Coconut Oil for frying
Method:
  • Whisk together eggs, maple syrup or honey and vanilla
  • Sift flour, almond meal, baking powder, cinnamon and salt into egg mixture and whisk until combined
  • Mix until coconut flour has absorbed some of the egg mixture (if too runny add 1/2-1 tablespoon of coconut flour)
  • Mix in Blueberries and Lemon Oil until combined
  • Heat pan with a little oil on a low heat
  • Add batter to pan, carefully flip pancake when firm enough to flip
  • If blueberries escape push them back under the pancake
  • Watch the Heat! Be careful not to burn.
  • Serve with your favourite Yoghurt and Maple Syrup
