Denese Gets Cooking - Paleo Blueberry Pancakes
Paleo Blueberry Pancakes
Ingredients:
- 4-6 Eggs (4 large or 6 small)
- 3-4 tablespoons Coconut Flour
- 2 tablespoons Almond Meal
- 1/4 teaspoon Cinnamon
- 1/4 teaspoon Baking Powder (Aluminium Free)
- 2 tablespoons Maple Syrup or Honey - Plus a little extra to serve
- 1 teaspoon Vanilla Extract
- Pinch of Himalayan Salt
- 125g punnet Blueberries
- 3 drops lemon oil - optional
- Olive Oil or Coconut Oil for frying
Method:
- Whisk together eggs, maple syrup or honey and vanilla
- Sift flour, almond meal, baking powder, cinnamon and salt into egg mixture and whisk until combined
- Mix until coconut flour has absorbed some of the egg mixture (if too runny add 1/2-1 tablespoon of coconut flour)
- Mix in Blueberries and Lemon Oil until combined
- Heat pan with a little oil on a low heat
- Add batter to pan, carefully flip pancake when firm enough to flip
- If blueberries escape push them back under the pancake
- Watch the Heat! Be careful not to burn.
- Serve with your favourite Yoghurt and Maple Syrup
