Recipe of the month: Gluten Free Christmas Shortbread

These super tasty gluten free short bread are the perfect treat or gift to someone you love this Christmas. You can ice these by using a small amount of powdered xylitol icing sugar mixed with a little lemon juice OR drizzle some melted 80% dark chocolate on top. YUM! 


Ingredients:
250g cubed butter at room temperature
½ cup caster sugar + extra for dusting
1tsp pure vanilla extract
½ cup rice flour1
1/2 cups Orgran GF Plain Flour + extra for kneading
½ cup arrowroot flour

Directions:
1.Preheat oven 150deg & line 2 trays with baking paper
2. Sift all flours until no lumps left into a large mixing bowl
3. Using Electric Beaters beat the butter, vanilla and sugar until pale and creamy
4. Slowly add the flour into the butter mixture and beat until a soft dough forms (approx. 1min)
5. Use your hands to bring the dough together
6. Turn out on to a floured surface, knead gently until smooth (if a little too soft or sticky knead in a bit more flour)
7. Roll out between 2 sheets of baking paper to 1cm thick
8. Cut out desired shapes and carefully lift onto baking trays
9. Optional – Sprinkle with a little extra caster sugar
10. Bake for 20mins or until slightly golden
